There are few records or sources pertaining to the Käfer family and we still don't know the maiden name of Elisabetha, the wife of Wolffgang Käfer and the mother of Maria Apollonia Käfer.
I've made a good connection with a researcher in Zaberfeld from our visits to the village on the Germany Trip. She found the baptism record for the brother of Maria Apollonia Käfer, Georg Niclas, dated 20 Juli 1701 and in it is gives the parents names, where they are from and the father's occupation of grave digger:

Day 20 July Wednesday

Wolff Kaifer from Anspacher Land, wife Elisa-
betha, gaenshirt and grave digger
Nicklaus Schmid and sponsor
Jerg Lechner, baur in Zaberfeld
and wife [his wife] Ursula
She also found the death record for Wolffgang Käfer on 8 Aug 1728, also in Zaberfeld:
August 8th died Wolffgang Kaeffer had been suffering from a
long illness and was buried the same day.
