The 1910 Census [Manhattan Ward 10, ED 183, p. 24/32] shows the CARMONA family: David, age 47 b. 1863; Mollie, 25 b. 1885; Joseph, 4 b. 1906; Sam, 3 b. 1907; and Nasam, age 6 months, b. 1910.

Was George's given name "Joseph" since George and Joseph were both born in 1906? Was there a twin brother "Joseph"? There is no one named "George" listed with the family in 1910.

I wonder if Jacqueline knows the answer here. I didn't find George or Joseph Carmona or Kaplan in the searches I use for NY births.

One possibility might be they said "George" and the census taker thought they said "Joe". Census data is not the highest reliability. Nice that you found this family under Carmona. But that is a bit odd since their 1905 marriage certificate uses Kaplan. Maybe he didn't want to give too much accurate info to the census taker?
