And, Pallas, who attended the baptisms of Emanuel Congo's children is also a candidate to be Simon Congo's wife.

{SIMON'S wife could easily be "Susanna" &/or "Pallas"}

The "Simons" may indicate a patronymic or "wife of". So, Susanna be either a daughter or wife of Simon Congo.
