I can't find Sarah in 1860 or the 1st enum 1870.

Per Philadelphia Death Certificates on labs.familysearch.org,

Sarah Apple, 84 year old widow, died 21 May 1872 of debility. Born in Penna, lived at 514 Dickerson Street, 1st Ward. Buried 24 May 1872 in Germantown.

6 May 1872 Public Ledger:

"APPLE - On the 4th instant, SARAH, relict of the late George Apple, in the 8?th year of her age.

The relatives and friends of the family are invited to attend the funeral from the residence of her son in law, Benjamin Myrtetus, No 514 Dickinson st, on Tuesday afternoon at 2 o'clock."

Sarah Apple was born 7 Feb 1788 and died 4 May 1872. She was buried at Hood Cemetery, Germantown, Philadelphia, PA, plot 320. Her husband George is indicated on the same tombstone.

Her mother's name was Rose, per:

There is a 1830 census for Mrs. Apple in Middle Ward Philadelphia no males, 001001, i.e. 10-15 and 30-40.

Note that Sarah Apple lived with Eliza Krickbaum and her family in 1850.
