
Possibilities;
1- There is a region of Romania called Caras-Severin and the name may be linked to this
2. Many Jews from the Mediterranean and Salonika immigrated to the Moldovia region in the last 18th Century. See the History of East European Jews (https://goo.gl/OtA4z1) and http://www.sephardicstudies.org/pdf/carasso-salonique-index.pdf
There is a well known Carasso family from Salonika and it's possible that there is a link to them, although this is pretty speculative.
