PRUNE BALLS - Katalin (Meynhart) Kovacs
Ingredients:
Noodley Dough (See Below)
Boiled Prunes
Cinnamon
Sugar
Browned saltine Cracker Crumbs (Need butter to brown)
Roll out Noodley dough and cut into 2 - 3 inch squares.
Fill squares with One Cooked prunes each, Cinnamon and sugar
Cook in boiling water until it floats.
Remove and drain.
While still warm, roll in crushed cracker crumbs that have been browned in butter.
Keep warm and serve hot.
Sprinkle with cinnamon and sugar if desired.
NOODLEY
Ingredients:
Left over mashed potatoes
Egg
Flour
Browned, crushed Saltines (need butter to brown crackers)
Add egg to potatoes, add enough flour to make a soft dough (similar to a pie crust)
IF NOT MAKING PRUNE BALLS:
Roll dough out and cut into 1/2 by 1 inch noodles.
Drop noodles into boiling water and cook until they float.
Remove from water drain.
Roll in browned, crushed saltine crackers.
Serve warm with a sprinkling of sugar over the top.
