I can't supply "proofs" but what I have to go on for our Mundy research in regard to Francis Flat and Elizabeth Mundy are as follows:
Elizabeth Mundy, dau. of Nicholas Mundy (Jr.? or II?) and Hepsibah Hopestill Hull. According to Nicholas Mundy's will at his death in 1734, Elizabeth had married a Francis Flatt and they had a son John Harry (Jack) and dau. Elizabeth.
Nicholas and Hopestill Hull had a son John, who also had a daughter Elizabeth, who married a John Flatt.
I have one source which lists Francis Flatt as having birth date of 1713, death date 2 Nov 1759 in Bucks Co., PA. This Francis Flatt was son of James Flatt and Elizabeth Depray which sounds like the ones your query was for.
I show a pedigree of ancestors for James Jan Janse Vander Vliet Flatt and Elizabeth Depray back quite a ways if this is of interest to you.
I've also researched our Mundy lines descendants through the "Samuel" line (another son of Nicholas and Hepsibah Hopestill Hull Mundy) down to my father, if this would be helpful.

Nicholas Mundy who m. Hopestill Hull is believed to be that Nicholas Mundaye whose baptism is recorded at Christ Church Parish, Barbadoes, WI 8/3/1668, son of Nicholas Mundaye and wife Elizabeth. Believe his birth record also appears in the old Piscataway records, apparently entered there sometime after the family arrived at Piscataway. The diaries (I have the originals) commencing 4/16/1849 of Dr. Joseph Stennett Martin of Piscataway has the following: "On my Mother's side I am descended from a Welsh family named Mundy who came to this country in the 17th century, the old family are spoken of as being hardy, resolute and enterprising, and many tales of their doings in this, then wilderness, are still extant and full of interest, indeed "Mundy blood is still regarded as the maximum term for what is otherwise called "the clear grit". Early 1700 deeds in my possession show the spelling to be Monday, the "Mundy" spelling showing up in the Metuchen, NJ branch of the family around the 4th generation. Dr. Martin's Mother Harriet Mundy 1804-1855 was the sister of Uzal Ogden Mundy 1809-1889 who was my Gt., Gt. Grandfather. There was a William Mundy or Monday on a ship to VA in the 1630's, but I have never found any connection of our Piscataway family to this elusive individual.
