Corn Pudding – “A true Mountaineer Treat”

From the cache of Xenia Kelley Scoggins

Ingredients: 2 eggs

1/4 cup sugar

1 tbl. of flower

2 tbl. of butter

1 small can of creamed or whole kernel corn

½ tsp. of salt

¾ cup of milk ( Mountaineers never heard of “fat free” or “1 %”.)

Process: Beat eggs slightly. Mix: sugar, flower & salt together then add to eggs, beating well

Add corn followed by the ¾ cup of milk.

Heat butter in casserole, let cool, then add to above mixture

Cook slowly at 350 for approximately 45 minutes.

CAUTION: Mixture should shake slightly but shouldn’t be watery. If it overcooks, it will become watery! Use good Mountaineer judgement in selecting cooking time!
