Chess Squares

1 stick butter, at room temperature

1 whole, large egg, well beaten

1 box yellow cake mix, not the pudding type

1 8 oz pkg cream cheese, at room temperature

1 lb confectioner’s sugar

2 whole, large eggs, well beaten

In a 9”x13” baking dish, pour the butter.

Melt the butter, but do not allow it to brown.

Add the well beaten egg and the cake mix, stirring well after each addition and until it is well combined.

With the hands, press out the bottom of the dish.

In another bowl, place the cream cheese, confectioner’s sugar and the beaten eggs.

Beat this mixture until well combined.

Pour the creamed mixture over the cake batter.

Place the cake into a preheated oven of 350F and bake the chess squares for about 35 minutes.

Remove the chess squares from the oven and allow for the cake to cool completely.

Then, cut the cake into squares and serve.

Cream Cheese Pound Cake

3 c granulated sugar

1 8 oz pkg cream cheese, at room temperature

3 sticks butter, at room temperature

6 whole, large eggs, at room temperature, well beaten

3 c all purpose flour

1 tsp vanilla extract

In a mixing bowl, combine the granulated sugar, cream cheese and butter, and the well beaten eggs.

With an electric mixer, cream this mixture together until fluffy.

Slowly add the all-purpose flour, a little at a time.

Mix well until the flour has been completely absorbed and a batter forms.

Stir in the vanilla extract.

Mix well.

Grease and flour a bundt cake pan.

Pour the batter into the bundt cake pan.

Place the cake into a preheated oven of 350F and bake the cake for about 60 - 80 minutes or until the cake is done (cake will be done whenever a toothpick inserted into the centre of the cake comes out clean).

Remove the cake from the oven.

Allow for the cake to cool completely before slicing or serving.

Serve.
