Source: Daughter (Marian) birth certificate:

Daughter (Marian) birth certificate in 1879 gives Georges age as 39 (=1840) at that stage (march 1879) assuming 1841 is correct he would have been 38.75 - nearly 39 - his birh place on that certificate is Muirkirk

LDS ancestoral file AFN: KJLB-74 has this as "abt 1842" Commondyke, Ayr, Scotland.
IGI File has 4 births, 3 are as per the Ancestoral file, 1 is 1841 Muirkirk,Ayr, Scotland
According to the map there's only 3.7 miles between commondyke and muirkirk
The Muirkirk file has an actual date in it - the others are "about 1842"

George's death records [cemetery book - waikaraka park] gives his age as 60 when he died in 1900 = 1840 - but then - Waikaraka Park headstone gives 2 different ages given [60 & 61] Either way - this puts his dob at 1839-1840 +/-1
So say 1838-1841

Based on the above facts i believe 1841 is a fair assumption.
