The name Sobieski is of Polish Origin. It means one who came from Sobieski, Sobieszki, or Sobieszyn (Sobiech's settlement), the namesd of villages in Poland (Smith, Eldson C. New Dictionary of American Names. New York: Gramercy Publishing Company, 1988). William F. Hoffman's book says that the root of this name ("Sob") means "self."
