If 1841 & 1851 census choices are correct, then Susan was born in 12 months preceding April 1835. Combined with gravestone age which requires birth between 4 Aug 1834 and 4 Aug 1835. Therefore 4 Aug 1834 ~ 1 April 1835

If Simon & Mary choice for parents is correct, Cornwall baptisms shows the family waited until 1839 for baptism. Baptism record states she was born in 1839. This is probably incorrect. There are no other Susan Wilkins of similar age in the area.

Something wrong with above conclusion. The marriage cert says she was already 20 when she married in April 1854, implying a birth date between Aug 1833 and April 1834.

Maybe she lied about her age in order to marry?

She was illiterate, and therefore may not have even known her true age.

Almost certainly Mary was lying about her age as she should have been about 18-19 at this time.
These factors together may have been the reason for a registry office wedding.
I think a registry office wedding might more easily let her conceal her age.
