In most german cities, birth books, marriage books and death books did not exist until the 19th century. Therefore, from a certain age, you can usually only refer to family records. Another factor in germany is that genealogy research often costs money and, unfortunately, most families are not interested enough. So you see that unfortunately not everything can always be traced back to sources.
German church records often go back to 1500, not "the 19th Century"!
Registers are being digitalised and can be found on www.archion.de if they have already been digitalised.
Otherwise you have to write to the church office and they will search the records for you. This costs about 30 or 40 Euros per hour plus a few Euros for a transcript of the entry.
You can find the contct details for the church easily if you google the name of the town and Ev.-Luth Pfarramt or Kirchenamt for Lutheran Churches or katholisches Pfarramt or Kirchenamt or Kirchenarchiv for Catholic ones.
