I am not sure precisely why Catharine is not attributed as a daughter to one of the three Bieber immigrant brothers to Berks County, but it's a natural association. She would have married Johann Georg Schaeffer in France, and emigrated with him and the rest of her family to the New World. This implies that the Schaeffers and the Biebers lived in proximity near Hirschland, Bas-Rhin, Alsace, France.
DNA results
DNA evidence has confirmed, through son Peter, that Catharine was a Bieber, of the same Bieber family that emigrated to Oley, Berks County, Pennsylvania. This implies that he was born in Europe and was brought along when both the Biebers and the Schaeffers (at least those related to Johann Georg Schaeffer) emigrated.
As to which brother she is associated with: she could be the daughter of either Georg or Theobold or Johannes (Paulus). While DNA evidence prefers as close a relationship with Theobold as possible, Johannes is already known to have a daughter Catharine born in 1721, so that is where I have placed her.
Note that this Catharine was said to have married Adam Staub. This was apparently the recollection of Annadelia Bieber, the second wife of Johannes Paulus, who likely did not know Catharine very well since she was already 18 years old at the time Annadelia married Johannes Paulus. Furthermore, Johannes and Annadelia emigrated to Pennsylvania a number of years before Catharine did, which leaves the possibility open that in that period Mr. Staub died and Catharine remarried to George Schaeffer back in France. That is what I'm assuming happened.
It's also still possible that Catharine is the daughter of another of the Bieber brothers, but their families are pretty well fleshed out, leaving little room for another child of Catharine's general age.
