Name is given as "Mary" on the death certiticate of Franciszek Szlagowski (1852-1898). But name is given as "Josephine" in 1880 US Census for Winona. So my guess is that she was named Marianna Jozefina, and went by "Josephine" because it was more unusual than "Mary."
