She is not mentioned in her fathers will of July 5, 1697; nor is there any mention there of any children by her. All the other children of Joseph Peck Jr. that were living at the time of his will are included in that document.
Further research indicated;
1) Why would she not be included in her father's will if living?.
2) Why, if she was deceased, is there no mention of her son in her father's will?
ETA: The chances of her having a son born in 1727 seem...slim at best.
